Meet The Partners

Gregg Horan Founder, Managing Partner
Gregg’s impressive career in the restaurant industry began at Gibsons Restaurant Group, where he started as an assistant manager at the flagship Rush Street location. Over the next three decades, Gregg’s hard work and leadership saw him rise to the role of managing partner and director of operations. Along the way, he became a driving force behind some of Chicago’s and the Nation’s highest-grossing and most iconic dining establishments, including Gibsons Bar & Steakhouse, Hugo’s Frog Bar, Quartino Ristorante & Wine Bar, Gibsons Italia, Ralph Lauren’s RL Restaurant Chicago and Polo Bar New York, and Boat House Orlando
The Greggory—named in his honor—embodies the pinnacle of his experience and passion for the industry. A true steak enthusiast with a special fondness for ribeye, Gregg brought his passion for exceptional food and hospitality to every corner of The Greggory. His ability to build and lead top-tier teams, combined with his unwavering commitment to delivering excellence, has helped create a dining experience that stands out.
When he’s not putting in 20-hour workdays, Gregg enjoys spending quality time with his wife, Karla, and their children, and relaxing with a round of golf.
Bill Veremis Founder, Managing Partner
Bill’s hospitality career began at Carmichael’s Chicago Steakhouse and advanced to a key role as one of the opening managers at Chicago’s iconic RL Restaurant by Ralph Lauren. After marrying his wife, Staci, he joined her family’s restaurant, working alongside his father-in-law, renowned restaurateur Jimmy Mandas. For 20 years, Bill served as managing partner of Rosewood Restaurant in Rosemont, IL, a cherished destination for fine dining and memorable events. He now channels this expertise into a successful hospitality consulting business, elevating dining experiences across Chicagoland.
Recognizing The Greggory’s prime location as perfect for something unique, Bill brought the vision to life with meticulous attention to detail. Inspired by the classic American traditions of the RL Polo Bar, he and Gregg infused elements like navy blues, plaids, dark wood tones, and brass accents into The Greggory’s design, creating a warm, timeless atmosphere. A passionate wine enthusiast and dessert lover, Bill adds a personal touch to the dining experience by pairing exceptional meals with the perfect bottle.
For Bill, The Greggory is more than a restaurant—it’s a labor of love and a tribute to the community. Having raised his three children locally, he’s proud to share this special place with the neighborhood he calls home.


Chef Jose Sosa Executive Chef Partner
Chef José Sosa brings unparalleled culinary expertise to The Greggory. Raised on his grandparents’ farm outside Mexico City, he developed a deep respect for nature, quality ingredients, and hard work—values that define his cooking. Moving to Chicago as a teenager, he began his culinary journey at Rosewood Restaurant, launching a career that spanned some of the city’s most iconic kitchens.
Chef Sosa spent 18 years with Gibsons Restaurant Group, advancing to executive chef roles at Hugo’s Frog Bar & Fish House, LUXBAR, and Gibsons Italia. At Gibsons Italia, he combined authentic Italian traditions with Chicago’s steakhouse culture, elevating the restaurant into a premier dining destination with a focus on globally sourced, top-quality ingredients. Most recently, he served as executive chef at Ummo Chicago, an award-winning contemporary Italian restaurant in River North. His partnership with The Greggory marks a homecoming, reuniting him with Bill Veremis and Gregg Horan to bring a fresh take on classic American cuisine to the suburbs. With a special emphasis on live wood-fire grilling, Chef Sosa draws on his trusted network of boutique farms and purveyors to ensure every dish reflects his commitment to excellence. Outside the kitchen, he enjoys traveling, exploring culinary inspirations, and spending time with his wife, Vivian, and their son Alessandro.
