The Greggory is a fine dining restaurant serving fresh interpretations of American food and beverage classics in a comfortable yet elegant setting. Guests will experience the comfort and convenience of the local bar and restaurant with a large step up in execution of food quality, presentation, and service.

There is a commitment to next level hospitality with every customer served, a commitment to quality with every dish prepared and a commitment to giving the customer a value with every experience.

The Hearth is at the center of the restaurant and it drives the menu. Classic offerings of prime rib, prime steaks, chops, and chicken will be executed on the wood-fired grill, oven, and rotisserie imparting unique flavors to the classic presentations.

The tavern is the neighborhood cornerstone and gathering place with a constant flow of friends and neighbors gathering from open to close enjoying inventive twists on classic offerings from both the food and beverage menu. The dining room is elegant enough to celebrate all of life’s special moments but approachable enough to use every day.

Meet Our Team

With decades of experience, two hospitality veterans and a renowned executive chef team up to bring a new dining experience to the Arboretum in South Barrington, Illinois.

Housed in a 10,000 square foot space, The Greggory combines an upscale American tavern concept with authentic cuisine and a modern aesthetic, creating a stylish, inviting neighborhood feel.

Gregg Horan


Gregg began his career with Gibsons Restaurant Group as an assistant manager helping operate Gibsons premier Rush street location.

With almost 3 decades of experience, Gregg worked his way up to managing partner & director of operations, successfully opening highly-successful restaurants including Gibsons Bar & Steakhouse, Gibsons Italia, Hugo’s Frog Bar, RL “Polo Ralph Lauren” Restaurant Chicago, and Quartino Ristorante & Wine Bar.

Bill Veremis


As a long-time veteran of the Chicago dining scene, Bill began his hospitality career at a very young age.

Over the course of two decades, Bill became a managing partner for the award-winning Rosewood Restaurant in Rosemont, IL, a local favorite for fine dining and extravagant events, working alongside the distinguished and consummate restaurateur, Jimmy Mandas.

During his seasoned restaurant tenure, he operated as an indispensable leader for Carmichael’s Chicago Steakhouse, RL “Polo Ralph Lauren” Restaurant Chicago, and QP, a fine dining Greek Restaurant.

Eddie Ishaq

Executive Chef

With nearly 20 years of experience at Lettuce Entertain You Restaurants, Eddie has consistently played a pivotal role in some of Chicago’s most prominent and featured restaurants in the hospitality industry.

He began his career as the kitchen manager at Wildfire, then traveled the country, playing a vital role in successfully launching various Lettuce Entertain You Restaurants.

Eddie worked closely with his mentor Doug Psaltsis to create the RPM brand and, over time, became the divisional chef responsible for managing all aspects of brand menu development, operations, staff training, and cultivating vendor relationships.
